Pancho's Mexican Restaurant

Pancho's Mexican restaurant offers excellent Mexican food from Guadalajara, Mexico, using the finest fresh ingredients, and for the health conscious, no lard is used in their food.

The guacamole appetizer was excellent. It contained no sour cream, and it was pure avocado, cilantro and tomatoes. Much to my delight I loved it and I am not a guacamole fan. The trick was in the pure guacamole without the sour cream.

For dinner we had the "Supreme Enchilada": four enchiladas which were chicken, beef cheese and beans smothered with a ranchero sauce lettuce, tomatoes, sour cream and guacamole. The "On the Border Fajita": shrimp, beef and chicken was an excellent dinner with bell peppers, onions, and tomatoes, served with Mexican rice, refried beans, guacamole salad, sour cream, Pico de Gallo and three flour tortillas. We also had "Pancho's Special": a 12 oz rib eye steak cooked with onions and mushrooms served with Mexican rice, refried beans, guacamole, salad, and three flour tortillas. Each entree was excellent. The beef, chicken and vegetables were of the highest quality and taste. Everything was very fresh and delicious. Each entree had its own distinct flavor and the spices were just right.

For dessert we had Sopapillas, which is a fried flour tortilla with honey, butter and cinnamon. We also had a Flan which was an excellent blend of fresh dairy custard with a caramel top that melts in your mouth. Then we then had an "arroz con leche" which is a superb "rice pudding".

Luis and Tina Uzhca were wonderful hosts and treated us like a king and queen. We had eaten at Pancho's prior to today and we found the food to be always of the highest quality, fresh and the service excellent.
