Recently I had the pleasure of dining at a little known restaurant on Milton Avenue in Ballston Spa called Paul's. As I walked in I could see that Paul's had a certain eclectic charm-there were many lovely antiques, Victorian loveseats, a piano and even an old stove off in a corner. Paul's has two dining rooms along with a bar off to itself.

Our wonderful waitress Shannon started us off with a basket of homemade bread that was simply outstanding. Shannon explained that is was old-fashioned warm homemade bread that Paul makes himself. The menu was incredible with a diverse selection and several promising specials. Shannon explained that Paul gets everything fresh daily. She recommended the fish chowder and the Shrimp a la Paul. The fish chowder was loaded with fish and was a chowder lover's dream. The shrimp a la Paul had large shrimp sauted in fresh herbs and garlic with a splash of white wine served over rice. It was mouthwatering. The shrimp was cooked to perfection and the herbs were perfect. At this point, I'm convinced Paul knows his stuff.

For our entrees, my guest and I ordered the Veal Monte Carlo and Stuffed Sole with shrimp and scallops Rockefeller. Each entre comes with a salad. The Veal Monte Carlo was delicious with a very large veal cutlet topped with mushrooms, fresh tomatoes and imported cheese in a marinara sauce with spaghetti on the side. It was a delightful blending of flavors and I enjoyed every bite. My dinner companion equally enjoyed his stuffed sole, shrimp and scallops Rockefeller. It was prepared in a white Mornay sauce with spinach and cheese and topped with fresh herbs. The seafood was so fresh the seasonings were just right and the sauce was perfect.

Dining at Paul's was a truly delightful time. It's an intimate small town restaurant that has been around for thirty years, which is a testimonial in and of itself to Chef Paul's cooking. It is that out of the way place you will enjoy going to again and again.
